Start Your Day In A Great Way With this Fertility Friendly Omelette

Love an omelette? Got a few left-over ingredients that need using up? An omelette is a great fertility-friendly way to start your day (tasty for lunch or supper too!). The combination of ingredients in an omelette helps to regulate your blood sugars for the day which is very important for those trying to conceive. Omelettes are high in protein, quick to make and super nutritious with a few added extras.

Fertility Friendly Omelette (makes 1)

Ingredients:

2 large eggs (great source of protein which helps slow release of carbohydrates in bloodstream, plus contain numerous vitamins and mineral)

50g chopped spinach (rich in iron and folate)

50g sliced mushrooms (a good source of selenium and Vitamin D)

50g fresh chopped tomatoes (high in Vitamin C)

50g  grated cheddar cheese (a source of calcium)

1/4 avocado, sliced (provides healthy fats)

1 tablespoon olive oil (for cooking)

Pinch of salt and pepper (to taste)

How to make:

Crack the eggs into a mixing bowl and whisk them until well combined. Season with a pinch of salt and pepper (optional). In a non-stick frying pan, heat the olive oil over medium heat. Add the chopped spinach and sliced mushrooms to the pan. Cook them for a few minutes until they are slightly softened. Pour the whisked eggs over the vegetables, making sure they are evenly distributed in the pan. Let the omelette cook for a couple of minutes until the edges start to set. Sprinkle the chopped tomatoes and grated cheddar cheese over one half of the omelette. Carefully fold the other half of the omelette over the filling to create a half-moon shape. Cook for another minute or until the cheese is melted and the omelette is cooked through. Slide the omelette onto a plate, and garnish with sliced avocado on top. Enjoy your fertility-friendly omelette!
