Get your pretty glasses out and enjoy this ‘nutritious and delicious’ Seafood Salad with a Zesty Dressing- great as a starter or as part of a Coronation party spread.
Smoked Salmon provides us with high-quality protein (important in the production of hormones and enzymes) and essential omega-3 fats which are important in keeping our heart, skin, brain, joints and eyes healthy. Studies have demonstrated that omega 3 fatty acids may improve ovulation. Consumption of DHA fatty acids has shown an increase in progesterone, which is a hormone that regulates the condition of the lining of the uterus and is essential to pregnancy and also linked to helping reduce post-natal depression (we will investigate this further in a separate article), and several vitamins and minerals including vitamins B, D and selenium which are all important for health and also fertility.
Prawns are a great source of protein and are low in fat, making them an excellent health and fertility food. Prawns are high in omega 3 fatty acids, iodine, selenium, zinc, vitamin D, and A, as well as significant amounts of vitamin B12, B6, and niacin. They’re also rich in iron, which aids in the production of red blood cells.
Cucumber– low in calories, are great for hydration, reducing inflammation and are a good source of vitamin C, K magnesium and fibre. They contain an antioxidant called quercetin which helps reduce swelling.
Avocados are amazing and are packed with more than 18 nutrients. They are a good source of healthy monounsaturated fats and contain a small amount of carbohydrate so great for helping balance sugar levels.
Seafood Salad with a Zesty Dressing
Makes 4 glasses
Ingredients
1 pack of smoked salmon pieces
20 cooked peeled king prawns
Chopped cucumber and fresh raw garden peas (or vegetables of your choice)
Dressing Ingredients:
Half an avocado, skin and stone removed
Juice and zest of 1 lemon
2 chopped spring onions
1 clove of garlic
250ml live natural yoghurt
Fresh Parsley to serve
Mix the prawns and smoked salmon pieces and vegetables together in a bowl and set aside. Blend the avocado, lemon zest, spring onions, garlic and half of the yoghurt together using an electric blender. Add half of the seafood dressing to your glass, then add a layer of the seafood, the yoghurt and top with the remaining dressing. Sprinkle with some fresh parsley and enjoy!
