Ever get the munchies but want something healthy? Why not try making these nutritious and delicious courgette crisps as a snack?
Courgettes are packed with nutrients, many of which are important for fertility such as folate, vitamin C, zinc, iron, various B vitamins, fibre and magnesium. They contain anti-inflammatory properties and are also linked to helping regulate blood sugar levels – both of which are important in relation to fertility.
Courgette crisps
Ingredients:
3 courgettes
Pinch of sea salt and black pepper
Splash of extra virgin olive oil
Sprig of rosemary
60g parmesan cheese
(pinch of dried chilli flakes for that extra bit of spice!-optional)
How to make:
Preheat your oven to 190 degrees C. Line a baking tray with baking paper and drizzle with olive oil. Wash and slice the courgettes (discarding the ends) into thin slices. Meanwhile put the seasoning and parmesan into a bowl and then tip in the courgette slices and mix with the ingredients. Place the courgette slices neatly onto the baking paper and olive oil and place a few sprigs of rosemary over the top (sprinkle over a few chilli flakes – optional) and put into the oven to bake- remove when crispy and enjoy!
