Fancy a dose of vitamin ‘sea’? Why not make this delicious fish curry – packed full of fertility-friendly ingredients. Fish such as cod are a great food choice as part of a healthy balanced diet and when trying to conceive. This is because they are high in protein and are low in saturated fat, they are also a good source of fertility-friendly nutrients including selenium, iodine, omega 3 fatty acids and choline.
Homemade Fish Curry
Ingredients:
500 grams (1.1 lb) white fish fillets (such as cod, tilapia, or halibut)
1 tablespoon coconut oil
1 onion, finely chopped
3 garlic cloves, crushed
1-inch piece of fresh ginger, grated
1 green chili pepper, finely chopped (adjust according to your spice preference)
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground fenugreek
1 can (400 ml) coconut milk
2 tomatoes, chopped
Juice of 1 lemon
Fresh coriander, chopped, for garnish
Pinch of sea salt to taste
How to make your fish curry:
Chop the fish into medium-sized pieces and set aside.
Heat the coconut oil in a large skillet or pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
Add the crushed garlic, grated ginger, and chopped green chili pepper to the pan. Sauté for another minute until fragrant.
Reduce the heat to low and add the ground turmeric, cumin, coriander, and fenugreek to the pan. Stir well to coat the onions and spices evenly.
Pour in the coconut milk and stir to combine with the spices. Allow the mixture to simmer for a few minutes until it thickens slightly.
Add the chopped tomatoes to the pan and cook for about 5 minutes until they soften.
Gently place the fish fillets into the curry, making sure they are submerged in the sauce. Cover the pan and cook for about 8-10 minutes or until the fish is cooked through and flakes easily.
Squeeze the juice of one lemon over the fish curry and give it a gentle stir. Adjust the salt according to your taste preferences.
Garnish with freshly chopped coriander.
