Did you know? Asparagus is a great prebiotic- feeding the good bacteria which live in our digestive system and helping them to thrive. Encouragingly, research has shown that cooked asparagus may be useful in gastrointestinal conditions as it helps to regulate the digestive system, thereby reducing inflammation and promoting repair. It also boasts an impressive nutrient profile – and is also low in calories too. Asparagus is particularly high in folate (Vitamin B9) which is important in the prevention of neural tube defects – vital prior to conception and onwards.
Eggs are just wonderful and contain numerous vital nutrients (some of which help to balance blood sugar levels) including protein, vitamin D and choline.
Asparagus and Poached Egg on Sourdough.
Per person:
2 medium eggs
5 Asparagus spears
1 round of sourdough
Parmesan shavings (optional)
Pepper to season (optional)
To make:
Poach the eggs in a little boiling water (around 2 minutes for medium eggs). Remove and place onto a piece of sourdough toasted. Meanwhile boil or steam the asparagus for a couple of minutes, drain and place around the eggs. Season with pepper and sprinkle over some parmesan shavings if you wish and enjoy!
