Watercress and Smoked Salmon Coronation Quiche-Fit For A King


So it seems we are all being encouraged to bake a quiche to celebrate the King’s Coronation this week!

The Coronation Quiche is described on the Royal Family Website as “a deep quiche with a crisp, light pastry case and delicate flavours of Spinach, Broad Beans and fresh Tarragon. Eat hot or cold with a green salad and boiled new potatoes – perfect for a Coronation Big Lunch!”.

Sounds delicious, however, we have opted for a quiche from our amazing fertility food expert Sue Bedford (MSc Nutritional Therapy). This is her fertility nutritious packed version of the Coronation Quiche. A watercress and Smoked Salmon Coronation Quiche-Fit For A King

So why are these ingredients so good for fertility?

Watercress – a king of vegetables, is a wonderful fertility friendly addition to any dish. It is a member of the cruciferous vegetable family and is rich in many nutrients including vitamins B, C, E and K, calcium, beta-carotene, iron and iodine.

Smoked Salmon- provides us with high quality protein (important in the production of hormones), essential omega-3 fats (important in keeping our heart, skin, brain, joints and eyes healthy) and several vitamins and minerals including vitamins B, D and selenium which are all important for health and also fertility.

Ingredients ( makes 3-4 portions)

  • 350g plain flour, plus extra for dusting
  • 1 tsp salt
  • 140g cold butter cut into cubes
  • 4 tbsp cold water
  • For the filling:
  • 50g watercress roughly chopped
  • 200g smoked salmon, sliced finely
  • 1 tbsp fresh dill (finely chopped)
  • 1 tbsp fresh parsley (finely chopped)
  • 4 large eggs (beaten)
  • 100ml milk
  • 250ml double cream
  • Pinch of pepper

Method

Sift the flour and salt together into a large bowl. Rub in the butter until fine.  Add  a small splash of water -enough water to make the dough come together, then wrap well and chill in the fridge for 10-15 mins. Roll out the pastry on a lightly floured surface until just thinner than a £1 coin then line a 26cm quiche tin – leave some excess pastry over the edge as it will probably shrink when baked.

Heat  the oven to 200C/180C fan/gas 6. Remove the pastry case from the fridge and line with baking paper. Fill with baking beans, bake blind for 20 mins. Remove  the beans and paper then cook for 5 mins more until pale golden. Turn down the oven to 160C/140C fan/ gas 3. Trim the edges of the pastry case with a sharp knife.

Place the watercress in the bottom of the pastry case. Whisk the dill, parsley, eggs, milk and cream together with a pinch of pepper. Pour over the salmon and watercress then bake for 30-40 mins, enjoy warm with a lovely salad and new potatoes.
